"MAYIM SHELANU" 

Ultra-Orthodox Jews collect water from a mountain spring at the outskirts of Jerusalem, at sunset time, towards the next day. The collected water will sit overnight to use the next day for baking Matzah, eaten instead of regular bread during the holiday of Passover. This collected water called "Mayim Shelanu", water that has slept the night and meanwhile got cooler
